Have you ever wondered what you should do with leftover frosting? You’ve finished frosting your cake or cupcakes—and now what?
Sure you could eat the leftover frosting with a spoon (or your fingers, no judgment), but it turns out that there are actually some tasty ways you can re-purpose it to make a delicious dessert.
Over at Cupcake Project, baker Stef shows how you can easily utilize your unused frosting before it goes bad.
Her recipe for Leftover Frosting Cookies is so super-simple you can have them in the oven in under five minutes. Are you ready for it?
Just mix the frosting with 1/4 teaspoon of baking soda, 1/4 of salt, 1 cup of flour and 1 large egg—and voila! Easiest recipe ever.
I tried it for myself with some chocolate buttercream I had left over from my son’s birthday cake. I also added in a small helping of bittersweet chocolate chips, and I am glad I did. Next time, I would add even more chips. If your frosting isn’t very sweet to begin with, you will probably want to add in a little sugar as well.
If your frosting has been in the fridge for a while, you will probably need to let it come to room temperature so it’s easy to mix. Or, if you are super impatient like me, just throw in some milk (I used almond) or oil to get the correct consistency.
If cookies aren’t your thing, there are lots of other fun uses for leftover frosting. Have it with some vanilla wafers or Pirouettes for a grown-up take on Dunkaroos, or smear it between graham crackers and put in the freezer. Roll the edges of the crackers in nuts or sprinkles for added crunch and color.
