Dairy-free “nice creams” — frozen treats that are as decadent and creamy as ice cream but without all the heavy cream — check all of these boxes and then some. We found a recipe for a frozen pineapple-mango nice cream that’s ridiculously easy to make, requiring just three ingredients and maybe five minutes of prep time.
The recipe on EatingWell calls for frozen pineapple, frozen mango and a spoonful of lemon juice or lime juice. Mix it all up in a high-speed blender and you’ve got yourself a smooth, sweet dessert that also happens to be packed with good-for-you things like vitamin C and manganese, among other nutrients. Both pineapple and mango are also rich in antioxidants and can aid in digestion, too.
Sprinkle some shredded coconut on top and you’ll be transported to the tropics in no time.
